GLUTEN FREE PALEO CREPES: Delicious & Easy

I wanted to share a little recipe that I am obsessed with and have been passing along to my friends and family lately.  You see, I am definitely not a cook - ask anyone that has stepped into my kitchen!  Oh, I could tell you some pretty funny cooking stories, but we will skip those for today.  Instead I wanted to share a delicious and easy recipe that takes under 5 minutes of prep time, is completely gluten free/paleo, and will leave you with tons of energy to kick start your day!  If I can make this recipe, so can you :)

Gluten Free Paleo Crepes
(Makes 5 small crepes)

1 ripe bananas
2 eggs
coconut oil

Fillings
1 tsp cinnamon
handful of fruit
almond butter

Mix the eggs and bananas on low until smooth.  Coat the bottom of a frying pan with coconut oil. Pour a thin layer of the batter onto the pan.  When the bottom side begins to golden, place your fillings onto one side of the crepe.  Then fold the side of the crepe without the fillings, on top of the other side. Flip again to ensure the inside is cooked and not goey.  Viola!

(Feel free to sprinkle more cinnamon and fruit on top.)

Enjoy!

Let me know if you give it a try.  And these babies would be an easy and delicious Valentine's breakfast for someone you love :)

With a grateful heart
XOXO always,
Sheila

Kristina :

This sounds yummy! Until now I've used a pretty similar recipe for gluten free pancakes but I can't wait to try your version :)
